Double chocolate blood sugar balancing cookies

Craving something sweet but without the sugar crash? These double chocolate blood sugar balancing cookies are the perfect treat when you are craving something chocolatey but don't want the blood sugar roller coaster afterwards. The combination of fibre, healthy fats, protein and carbohydrates keep your energy steady and your cravings in check.

Ingredients:
180g banana
5ml vanilla essence
300g nuts of your choice (I used a mix of almond, hazelnuts & cashews)
40g cocoa powder
70g dark chocolate (70% minimum)
Pinch of sea salt
Method:
Preheat oven to 180c.
Mash the banana in a bowl. Add the vanilla & mix until combined
In a food processor blend the nuts until they make a fine crumb. Add the cocoa powder & salt
Chop the dark chocolate into little chunks
Mix all the ingredients together
Wet your hands with water or a little bit of oil (the mixture is sticky) & roll into roughly 50g balls, flatten into cookie puck on a lined baking tray
Bake for 15mins
